A lot of prep work goes into a farm-to-fork meal at 12 Acres. First the chefs gather free-range chicken and hormone-free beef from 12 Acres Farm, flour and grains from Gold Forest Grains, and fresh produce from local purveyors. They then get to work baking bread, rolling pasta, pickling vegetables, blending preserves, and curing and smoking meats and fish. And because they’re dedicated to sustainability, they use the whole animal whenever they can.
Patrons enjoy the fruits of their labor in the form of charcuterie boards, fried buttermilk chicken, and burgers with housemade aioli and mustard on a freshly made bun. In fact, this burger appeared on The Tomato’s list of Top 100 Best Things to Eat or Drink in Edmonton. But it wasn’t the only dish from 12 Acres that made the list–The Tomato also praised its Gold Forest Grains salad, calling the seasonal creation of farro, barley, wheat berry, and beef tongue “a taste of the prairie.”
